Dining at Ergo is like living in a dream – you are transported into a parallel reality, of elegant contemporary interior decor and magnificent culinary adventure!

Totally dreamy…

Hosted at the prestigious The Dubai EDITION, in one of the city’s most in-demand neighborhoods, the entrance sets the tone for a first class evening.

A private entrance is also available, should you wish to discreetly bypass the hotel lobby, and you are instantly transported up to Ergo.

Ergo presents indoor or terrace seating, and a marvelous centrepiece bar.

I would definitely recommend exploring the drinks menu, as the bartending staff are tip-top, both in their dedication to excellence as well as in a spirit of innovative experimentation – in fact, I’ll predict right now that although newly-opened, there are international bar awards on their way for Ergo!

For instance, ask what’s “on tap” – and be surprised!

Presentation is straightforward and direct – and it’s because the frills are a distraction when the Zeitgeist is the genius mixology at very fine level of refinement and mastery in terms of selection and combination of magical ingredients.

And the result is truly magical.

I’ll leave it for you to inquire with the formidable Ms Laura Marnich, on-site GM, as to the details of concoction – my drink of the year at this point.

In fact, I’ll drive Abu Dhabi – Dubai and back just for another sip, at the drop of a hat; and that’s how unique and spectacular this drink is!

Selection is excellent, and many other surprises are in store for those willing to follow their instincts, from a very drinkable Pinot Noir served as house wine to creative and playful Campari bitters…

But Ergo Bar & Restaurant is as much restaurant as it is bar – and the culinary prodigees in the kitchens surely don’t operate in the shadows of the bar counter!

The menu is eclectic, and carefully curated to maximize flavors and exciting flavor surprises!

Oysters are bathed in a mystical dressing, and the palate is caressed by waves of dreamy ecstasy – these are tidbits that you enjoy with your eyes closed, as the intensity of the emotions simply overload the brain, and eye-sight is sacrificed in order to prevent your head from exploding with sensual pleasure.

And speaking of pleasures of the senses, within a context of a fine-dining restaurant lounge, I heard that Ergo is preparing for a very special New Year’s Eve indeed!

Meanwhile, every dish presented at our table was magnificent, and accompanied by drinks on the par!

And there is perhaps Ergo’s finest quality: the perfect balance between excellent and exciting drinks and dishes.

For it is not easy to put forward an exceptional bar; nor is it easy to present an extraordinary fine-dining degustation food menu – so imagine how rare it is to find a synergy between the two that not only complements each other, but actually serves as trampoline to bounce off each other and reach always higher accomplished delicacies!

For an evening of dining within the dreamworld of extremely talented teams, of both bartenders and chefs, Dubai’s Ergo Bar & Restaurant may be the new kid on the block, but it is a child prodigy who will travel far and wide as news of the incredible offerings spread like wildfire among Dubai’s epicureans.
